Our Story: From Southern Italy to Exeter, NH

 

Our story begins in the rolling hills of Torre Le Noccelle, a small village in Southern Italy. It’s here, in the Province of Avellino, that my wife Susan’s grandparents, Jennie and Charles Cassano, fell in love with a way of life centered around family, fresh ingredients, and incredible food. Like many of their generation, they set out for America, carrying with them not just their belongings but also the rich traditions and cherished recipes of their homeland.

Growing up, Susan was immersed in this beautiful culture, learning to cook with her mother and grandmother. She developed a deep appreciation for the authentic, farm-to-table approach that defined their cooking. It became her dream to one day open a restaurant that would honor these traditions, bringing the true taste of Southern Italy to a new generation.

 

A Divine Connection

 

For years, Susan and I, a proud Irishman with a healthy dose of wit and a penchant for being the odd one out, shared this dream while running our diner, Ober Easy Diner. Then, in late 2024, a remarkable opportunity arose. Cornicello, an authentic Italian restaurant in Exeter, went up for sale. As we learned more, we discovered a stunning coincidence—or perhaps, destiny. The restaurant was founded on the very same culinary traditions from the Province of Avellino that Susan’s family held so dear.

We began dining at Cornicello weekly, not just as customers but as admirers of its legacy. It was there that we met two extraordinary people who were the heart and soul of the restaurant: Josh, the talented sous chef, and Michelle, the charismatic bartender. Their passion and skill were undeniable. We knew in our hearts that if we were to acquire Cornicello, it had to be with them. Our goal wasn't to change anything, but to ensure the cherished legacy of Cornicello would live on and become even better under the guidance of these two exceptional talents.

We spoke with Josh and Michelle, sharing our vision and our commitment to preserving the restaurant’s unique character. To our great joy, they agreed to join us, completing our new executive team. They would be the true guardians of Cornicello's authentic spirit.

 

The Legacy Continues

 

On May 12th, 2025, our dream became a reality. We officially took ownership of Cornicello, with a vow to honor its past and build an even brighter future. We believe that this was not a coincidence, but a divine purpose. It brought together Susan’s Italian heritage, my own unique perspective (which the team mostly tolerates with good humor!), and the incredible talents of our new partners.

​

Today, Executive Chef Josh continues to craft exquisite, handmade pasta and authentic dishes from Southern Italy, all made with the same passion that inspired Susan's grandparents. And at the helm of our vibrant front of house is Executive Bar and Beverage Director Michelle, whose creativity and warm spirit ensure that every guest has a memorable experience.

We are proud to continue Cornicello's legacy, offering an authentic taste of Southern Italy right here in Exeter, New Hampshire. We invite you to join us and become part of our story, a story of family, food, and the beautiful journey that brought us all together.
